Banon of Hand-made Goat's milkThis is a small cheese made from whole raw goat's milk, produced in the farms of Haute Provence. It is matured in a dried chestnut leaf, which has been softened and sterilized by boiling it in water and vinegar, and then tied up with natural rafia. It is thus presented, wrapped in the chestnut leaf; upon opening it one discovers a soft, creamy white pate. Fabrication : fermière - lait cru - AOC |
