Banon of Hand-made Goat's milk

This is a small cheese made from whole raw goat's milk, produced in the farms of Haute Provence. It is matured in a dried chestnut leaf, which has been softened and sterilized by boiling it in water and vinegar, and then tied up with natural rafia. It is thus presented, wrapped in the chestnut leaf; upon opening it one discovers a soft, creamy white pate.
It has a smooth and spicy flavour, heightened by the tanin emitted from the chestnut leaf.

Made from raw milk
Fat Content: 45%
Dry Matter of Total Fat: 25%

To accompany the banon we would recommend a fruity white wine or a young red wine from the southeast for a young banon and a Muscat from Beaume de Venise for a more mature banon.
